Makin’ Banana Pancakes…Waffles…

Banana waffles. We made banana waffles and they were so good.

This is going to be a short, little blog but it’ll be a fun one! Something I don’t do often is food photography! I’ve done plenty of coffee photography because…well, I went to lots of coffee shops in Buffalo, but I haven’t been to many out in Salt Lake! But, I have however found a cooking buddy named Mercedes (who we met in the Bear Lake blog) and when we do make something, we try to take pictures! Honestly, she and I are absolutely amazing in the kitchen. We rock. We’ve made so much together.

BUT ENOUGH.

On to the banana pancakes!

I mean, banana waffles…

Yeah, we made banana waffles instead but it seriously was amazing. We also threw some chocolate chips in there! But okay, here’s the funny part of this story. The only reason we started making banana pancakes (and waffles) is because of a friend in Denmark! She posted on Instagram about two ingredient pancakes: one large banana and two eggs. We tried it (I did, specifically) and wasn’t a huge fan. But, we didn’t want to make it, so I added some Krusteaz pancake mix and a bit of water. This was the first attempt and everything was eyeballed.

And honestly, Mercedes and I both agreed these were better than just the flour pancakes we made!

Now, admittedly, we know we need to make this recipe completely from scratch (and we will soon!), but still, the banana adds sooo much! And the chocolate chips of course. But anyways, here’s the rough recipe (it kinda changes every single time we make it):

  • 3-4 large bananas
  • 2 eggs
  • 1 1/2 cup pancake mix
  • 1/2 to 2/3 cups water (dependent on size of bananas)
  • 2 tablespoons vegetable oil
  • literally as many chocolate chips as you want

Mash the bananas with a fork, or, if able, a blender or food processor (we’ve used a fork every single time and love the small banana chunks). Add the eggs and stir well. Add pancake mix, water, and vegetable oil and mix until batter is smooth.

Spray waffle iron with vegetable oil, and pour until full. Cook until golden brown 3-4 minutes.

I will say – these seem to be better when cooked a little bit longer than the usual 3-4 minutes. It’ll depend on the hotness of your iron and how much batter you put into the iron. But alas, we all love waffles, don’t we??

I’ll let the photos speak for themselves, but man, these are insanely good! Add some bacon and eggs in there and WOO you’ve got yourself a good breakfast. Maybe some berries too
